Oh, Joy

Well, apparently my uterus etc. is not dead after all. After six months, it's back to life again, with a vengeance, like one of those inactive volcanoes that blows up the mountaintop. I feel sooooo pukey :(

RECIPE - Nut Loaf

Since gingerspark asked...

with notes on substitutions

1 tbsp. olive oil, bit extra for greasing*
1 onion, chopped
1 leek, chopped **
2 celery ribs, finely chopped***
8 oz. mushrooms, chopped
2 garlic cloves, crushed
15. oz. can lentils, rinsed and drained***
1 cup mixed nuts, finely chopped
1/2 cup all-purpose flour
1/2 cup grated Cheddar cheese****
1 egg, beaten
3-4 tbsp. chopped fresh mixed herbs*****
salt and pepper to taste
chives and parsley, as garnish

* Or you can just spray some cooking spray, like Pam, into your baking pan.
** I use green onions, which to me are equivalent.
*** I've substituted shopped asparagus, works the same.
*** Or you can cook lentils yourself. Also, you can sub chickpeas, chop up a bit.
**** Grated Parmesan works just as well.
***** Parsley, rosemary.

1. Preheat oven to 375 F. (My recipe book says to prep a bread loaf pan with waxed paper and olive oil, but I've used a Pyrex casserole dish sprayed with Pam and it was fine. I also did it was a loaf pan, but it didn't turn out as a stiff, sliceable "loaf" either time.)

2. Heat oil in large pan, add onion, leek, celery, mushrooms, garlic, cook gently for ten minutes. (See above for substitutions.)

3. Add lentils, nuts, flour, cheese, egg, herbs. Season with salt, pepper, and mix. (See above for substitutions.)

4. Spoon mixture into pan, make sure it fills out bottom, sides, flatten the top. Bake for 50-60s minutes. (My book says uncovered but I covered it both times, didn't want it to get too dry.)

5. Serve with a parley garnish if you have it. I suggest ketchup as a condiment.
